This oatmeal recipe can be very versatile- you can mix in anything you'd like (although I highly recommend using this Cacao Magic Vegan Superfood Protein Powder) and top with anything and everything yummy!!

HINT** this recipe serves 3-4 people!

INGREDIENTS

2 Cups Vanilla Unsweetened Almond Milk (or any other dairy-free liquid of your choice) 

2 Cups water

1 Cup Steel Cut Oats

3 Tablespoons Coconut Sugar (Or Any Other Sweetener of Your Choice) 

A Pinch of Sea Salt

A Pinch Of Ground Cinnamon  

2-3 Tablespoons of Cacao Magic

TOPPINGS

Banana

Peanut Butter

Hulled Hemp Seeds

Chia Seeds

Edible Glitter!!! (Optional.. But not really optional)

(Use any toppings you love!) 

 

DIRECTIONS

1. In a medium sauce pan, let almond milk and water come to a boil. Once it's boiling, reduce the heat to a simmer and pour in the steel cut oats, coconut sugar,  salt and cinnamon- stir occasionally for 25-30 minutes or until desired consistency is achieved.  

2. Once it's done, remove from heat and mix in Cacao Magic until combined. Feel free to add any other mix-ins now.  

3. Pour in bowls and top with whatever toppings you'd like. ENJOY!! 

Egg White Quest Bar Proatmeal

Hey peeps!! Are you ready for a yummy, healthy breakfast with 36 grams of protein? Do your body a favor and feed it this deliciousness. You will love it! 

I call this "Proatmeal" because it's packed with protein. Woohoo! Egg white oats is one of my go-to breakfasts when I want to eat healthy and start my day off right. Its best made on the stove but you can also make it in the microwave (just make sure you stir every 30 seconds!) And you just have to top this off with a quest bar. Everything is better with a quest bar on it. Trust me. 

I tried to simplify this as best as I could but if you have any questions, feel free to ask!

INGREDIENTS:

1/3 Cup Gluten-Free Rolled Oats

1/2 Cup Almond Milk (I prefer Vanilla Unsweetened)

3 egg whites

1/2 teaspoon vanilla extract

a dash of cinnamon

Toppings:

Chocolate Chip Cookie Dough Quest Bar

 

DIRECTIONS:

1. In a medium sauce pan on low heat, pour in the oats, almond milk, egg whites, vanilla extract  and cinnamon STIRRING CONSTANTLY! You do not want to let the egg whites sit in the pan unstirred otherwise they will not mix thoroughly and it won't be pretty. Remember, they cook quickly! Once the oats are at a thick consistency and no longer watery, remove pan from the stove and pour oats into a bowl. The entire cooking process took me about 5 minutes.

2. Top oats with a cut up quest bar and enjoy!

Pumpkin Pie Oatmeal

Good morning party people!

I hope you all survived Black Friday and had a wonderful Thanksgiving! 

My family and I are all serious pumpkin pie lovers. I'm talking SERIOUS. Don't mess with me and my pie! So in my pie mindset, I thought about finding a way of being able to eat leftover pie for breakfast but without the guilt... because who doesn't eat leftover pie for breakfast?! 

Well, here is my result! This simple yet delicious oatmeal taste like a warm, fresh pie and fills you up leaving you ready for your day. I am a sucker for anything healthy that tastes like the real deal and I am telling you. This is it. Give it a try!

Also, feel free to substitute the almond milk for any other liquid like regular milk, coconut milk or even water. 

And if you're feeling really crazy, top it with brown sugar. Oooooo Ahhhh! YUM!

INGREDIENTS:

1/2 Cup gluten-free rolled oats

1/2 Cup vanilla unsweetened almond milk OR water

1 heaping tablespoon pumpkin puree

1 packet stevia or sweetener of choice

1 teaspoon pumpkin spice OR

-1/4 teaspoon ground cinnamon

-1/4 teaspoon ground nutmeg

-1/4 teaspoon ground ginger

-1/4 teaspoon ground cloves

 

DIRECTIONS:

For stovetop instructions:

1. In a small saucepan, cook all of the ingredients together on low heat, stirring every minute or so to prevent from burning. Once the oats have soaked up all of the liquid (after about 3-5 minutes) place in a bowl, let cool and enjoy!

For microwave instructions:

1. Place all ingredients in a microwave safe bowl and mix until  there are no lumps. Microwave for 1 minute, stir, microwave for another 30 seconds- 1 minute, depending on the strength of your microwave. Let cool for a minute and enjoy!

 

Macadamia Nut Raisin White Chocolate Chip Oatmeal Cookie Bars

Okay so my manager at work had been asking me to make these cookies for the longest time and I finally decided to do it. They were a huge hit! 

I often use this oatmeal recipe when I make plain oatmeal cookies and sometimes I even make them into a cookie sandwich. Yum! I'll post photos of that soon.

INGREDIENTS:

2 Cups flour

2 Cups Rolled Oats, pulsed to a flour

1 Tbsp baking Powder

1/2 tsp baking soda

1/2 Tbsp Cinnamon

1 Cup salted butter, softened

1 Cup light brown sugar, packed

1/2 Cup white sugar

2 eggs

1 Tbsp vanilla extract

1 1/4 Cup of macadamia nuts

1 Cup raisins

1 1/4 Cup white chocolate chips 

More white chocolate for drizzling on top, if desired

 

DIRECTIONS:

1. Preheat oven to 350F. Line a 9X13 baking dish with parchment paper or foil. Set aside.

2. Cream together butter and sugars. Add vanilla extract and eggs one at a time until incorporated. Scrape down sides as needed. 

3. In a separate bowl, mix flour, oat flour, baking soda, baking powder and cinnamon until combined. Slowly add the flour mixture to the butter mixture. Mix until combined. With a rubber spatula, fold in raisins, macadamia nuts and white chocolate chips. Careful, this dough is dangerously good.

4. Place cookie dough in the greased pan and flatten. Bake for 16-18 minutes or until light golden brown. (Time varies depending on your oven but I found that 16-18 minutes was the perfect amount of time for mine) 

5. Let cool and cut. For the white chocolate drizzle: 

Heat extra white chocolate chips in a microwave safe bowl in the microwave for 30 seconds at a time. Stir after each 30 second interval to ensure they won't burn. Once the chocolate is melted, pour in a plastic baggy and cut off one of the tips. Drizzle all over the cookie bars. Let dry and enjoy!!
